When you don’t have time to meal plan…

If you follow me on insta, you know Blake travels a lot for work and he was just gone for an entire WEEK, rough. He just got back yesterday afternoon so we spent the rest of our Sunday having family time (instead of meal planning and prepping for the week like we usually do.) So this week we are flying by the seat of our pants. BUT, it’s time to get healthy, again. Anyone else feel like they are constantly “getting healthy” over and over again? Story of my life. So this week we are going to try to stick to salads, veggies and lean protein.

We met up with James + Meg at Whole Foods this morning super last minute (because shopping with friends is always more fun), so we had no game plan whatsoever. During weeks like this, I have my go to grocery run that I know I can turn into meals/healthy snacks. So that is what we went with…here it is:

This morning’s grocery run

salmon

rotisserie chicken

green onions

escarole

frisee

arugula

kale

berries

red onion

sweet onion

jalapeno

garlic

avocado

corn

cauliflower

brussel sprouts

tomatoes (LOTS, we go through tomatoes at an insanely quick pace)

apples

pears

oranges

yogurt

eggs

cous cous

$96.45

bb’s food/snacks

freezer dried mangos

kale chips

broccoli snack packs

sprouted wraps

$115.92 (total including bb’s food)

Here’s my non-plan, plan:

(1) Cut and wash all the lettuce. If I don’t wash it right away, it will go to waste. I also am a FREAK about my lettuce being dry, so I will let it dry for an hour or so. Here are some salad combo options:

escarole + frisee + pear + avocado + walnuts (not on my grocery list but I always have those in my pantry) + champagne vinaigrette

arugula + tomato + red onion + avocado + balsamic vinaigrette 

arugula + roasted veggies + avocado dressing

arugula + escarole + apple + green onions + avocado + balsamic vinaigrette 

escarole + tomato + chicken + avocado + green onion + hard boiled egg + imitation Maggiano’s chop salad dressing (evoo + red wine vinegar + garlic + red pepper flakes + oregano + a dash of sugar or honey)

(2) Grill the salmon and corn tonight + roast all the veggies. AND make the BEST grilled corn recipe smothered in a chipotle jalapeno butter, linked HERE.

(3) Make the cous cous tonight too for bowls with leftover salmon + veggies.

(4) Figure it out from there ;)…

Personally, I would rather use every single pot and pan in my kitchen for one night and make a total mess and have everything made and ready to go for the week after that. But you could also make everything as you go throughout the week!

So there you have it, because meal planning every week sounds great in theory, but sometimes it is just not in the cards for me!
