Grilled corn with chipotle jalapeño butter

Of all the foods and recipes in the world, I recognize it seems a little weird to share a corn recipe. But this corn is THAT GOOD. And to be quite honest, I am not even a corn person. A couple weeks ago, I had really good corn while I was out to dinner. It had a smokey chipotle butter sauce on it, and it was to-die-for. So, I ventured to recreate the amazingness, and I did a pretty good job if I do say so myself.

AND, I discovered the best mom hack of all time. Blake and I like to go out to eat and we don’t like leaving BB at home with a sitter all the time. Naturally, she comes with us for a lot of meals out. I would like to say that all of those meals go on without a hitch, but that is not life with kids. Usually, she is great. But sometimes, she just does not want to sit through an entire meal, and I can’t really fault a 14 month old for that. Enter, the greatest mom hack of all time to get your kids to sit through a meal…corn on the cob. Because I am not really a corn person and do not make it much, I had never given BB corn. Well, it turns out, she flippin LOVES corn. It is the perfect size for her to hold in her hand, it is sweet, and delicious. For a tiny human with four teeth, it takes a really long time for her to work her way through an ear of corn. Which means blissful, undisturbed mealtimes. So, it is now a trick I have up my sleeve to keep her happy and fed during our dinners out.

In the past two weeks, we have eaten this three times + many more times with leftovers. Last night, we christened our brand new patio table, ekk! Hand made by my dad and me, so it is extra special. And when I say by my dad “and me,” I really mean that I was his assistant and handed him pieces of wood and screwed in the occasional screw. Our patio has been in dire need of a facelift, and we finally have a nice table and new grill, so we made Blake’s favorite, steak, with this corn on the side. YUM. Back to the recipe. This is the perfect side dish, as it can be eaten with just about anything. We have eaten this with Mexican food and burgers and I am sure it would be awesome with BBQ. Do not be scared off by the jalapeno in the recipe, I removed all of the seeds and after it is cooked, it has lost a lot of it’s heat. If you are looking for some serious heat, do not remove the seeds.

Grilled corn might also be the easiest recipe EVER. So, here you have it:

INGREDIENTS

5-6 ears of corn, shucked and cracked in half

1/2 red onion, diced

1 jalapeno, diced

6 tbsp butter or olive oil (if butter, melted)

1/2 tsp garlic powder

1/2 tsp chipotle powder

salt + pepper to taste

DIRECTIONS

(1) Turn grill on medium or 400 degrees and allow to pre-heat (I have also done this recipe in the oven, when it was raining, and I simply put the aluminum foil on a baking sheet and set the temperature to 400).

(2) Combine butter/olive oil (lately I have been doing 1/2 butter, 1/2 olive oil), garlic powder, chipotle powder, salt and pepper and stir to combine.

(3) Stir in red onion and jalapeno.

(4) Lay corn on aluminum foil (I layer two pieces of aluminum foil to prevent tearing), then dollop one scoop of the jalapeno mixture on top of each ear of corn (I always leave a couple plain, for BB).

(5) Place aluminum foil with corn on it directly on the grill over medium heat. Cook 12-15 minutes, flipping once halfway through.

(6) Remove corn from grill and reserve jalapeno mixture that has fallen onto the aluminum foil. Before serving, dollop cooked jalapeno mixture over each ear of corn.
