Greek Meatballs

I have been on a big Mediterranean food kick lately. If I can slather it with hummus or tzatziki, I am a happy girl. I also love meatballs, in all varieties, because (1) they are delicious and (2) they are the perfect baby food. I love a recipe that works for the entire family, with only slight modifications. Enter these Greek meatballs. We paired them with pita and made a Greek meatball gyro, but they would be just as delicious served with a Greek salad or Mediterranean plate with couscous and other accoutrements. Bonus, these are so easy to make and take less than 2o minutes.

The original recipe was actually served straight with tzatziki and made with ground beef, but I made some modifications and made a healthier (gluten free and dairy free) and baby friendly version. After a weekend of WAY overindulging, I was in dire need or veggies. So I loaded my gyro up with tomatoes, cucumber, and onion. It was fresh and delicious and made the perfect first official patio meal of the season. I am not a big cheese eater, but when I told my sister (cheese guru) this recipe, she said “yum, but I would add feta.” So for you cheese lovers, that might be a good addition.

It’s 80 degrees in Chicago today, so fry these babies up and get outside!

Cook Time: 20 minutes

Servings: 4

Ingredients:

2 lbs ground turkey

2 ½ cups chopped spinach

½ cup diced red onion

4 cloves garlic, minced

2 tsp oregano

Salt + Pepper to taste (add this step after you have taken out baby friendly meatballs, if your baby has not been introduced to garlic, you can also add the garlic after)

Olive Oil (I used the Spanish Olive Oil 365 Brand from Whole Foods, I find that using different olive oil varieties can really change the flavor of your meal)

Toppings:

Red onion

Cucumber

Tomato

Tzatziki (this is the recipe I used)

Whole wheat pita

Instructions

(1) Combine all ingredients except olive oil

(2) Roll into heaping tablespoon size meatballs

(3) Heat 1 tbsp olive oil in a skillet over medium heat

(4) Fry meatballs 3-4 minutes on all sides until browned and cooked through

(5) Let rest 1-2 minutes and serve
